GST e-invoice extraction

Turns Indian GST tax invoices, PDF or scanned, into the government's INV-01 JSON payload. Every value the model returns is checked back against the document text, so a field it cannot corroborate is reported as absent rather than invented; a missing mandatory field means no payload at all. Per-field provenance and OCR confidence travel beside the payload, never inside it.
